Recipe: Shrimp and Spinach Soup

Comfort food. <3 Was looking for the recipe of the Vietnamese version that would resemble what my momma used to make for me as a child. (She did teach me once in my late teens/early twenties… that’s where I incorporated the blender… and I wrote it on an index card. But… not too sure where that is right now or if I even have it still.) His mother also made this for me at least once or twice because it’s one of my fave. Simple… yet… yum! Well, this particular one is in the works, but it’ll do for now! Some days, I just want something soupy with rice.

Ingredients

Black Pepper | 2 | Chicken Broth (15 oz. can) | ½ lb | Shrimp (peeled and deveined) | |
2 | Green Onions (optional) | 2 | Water (use can) | 9 oz | Spinach |
1 tbsp | Fish Sauce | Mushroom (optional) | |||
1 tbsp | Soy Sauce | ||||
Instructions
Steps | Description | |||
Step 1 | In blender, combine Shrimp, fish sauce, and black pepper. Blend until smoothe. | |||
Step 3 | In pot, combine chicken broth and water. Bring to gentle boil over medium high heat. | |||
Step 4 | Scoop in balls of shrimps with spoon. Cook for a few minutes. | |||
Step 5 | Add in Spinach. Add in Mushroom first if used. | |||
Step 6 | Cook for a few more minutes. Lower to medium low for few minutes. Then simmer to keep warm. | |||
