Recipe: Shrimp with Tomatoes and Orzo

First time using Orzo! Wanted to make something with frozen shrimp… and this was it. The excursion to find Orzo was a task in itself. 😀 Went through Target, to the rice/pasta aisle… just because I felt like it would be there. Took me some time to find it! I was in the right place though. x]

Can’t forget that instead of “tossing” the shrimps, I took it as… stir-fry it. x]! But now we know, like after the fact! Like tossing a salad… Cooking terms, it just goes over my head, sometimes. Learning. Definitely, learning!

Ingredients

6Garlic cloves, minced1 tbsp + 2 tspExtra virgin olive oil1½ cups/12ozOrzo
3 cups/2pintsGrape tomatoes, halved3 ¼ cupsLow Sodium Chicken Broth1 lbLarge Shrimp, peeled and deveined
¼ tspSalt2 tspExtra virgin olive oil1 cupFresh Basil, torn (optional)
¼ tspPepper
 
 

Instructions

StepsDescription
Step 1Preheat oven to 400, with rack in top position.
Step 2In large ovenproof skillet/dutch oven, with lid, heat 1 tspn + 2 tsp oil over medium heat.
Step 3Add garlic. Cook until brown, 1 minute~.
Step 4Increase to high heat. Add tomatoes. Cook and stir occasionally until softened, 6 minutes~. Season with salt and pepper.
Step 5Add orzo and broth, and bring to simmer. Medium-low heat.
Step 6Cover and bake until liquid is mostly absorbed, 10 to 12 minutes~.
Step 7Toss shrimp with remaining tsp oil and ¼ tsp salt and ¼ pepper. Overnight in fridge to thaw or cold water for 5-10 mins.
Step 8Remove skillet from oven, and place shrimp on top of orzo.
Step 9Heat broiler. Broil until shrimp are opaque throughout, 4 minutes~.
Step 10Sprinkle with basil and serve.
