Recipe: Shrimp with Tomatoes and Orzo

First time using Orzo! Wanted to make something with frozen shrimp… and this was it. The excursion to find Orzo was a task in itself. 😀 Went through Target, to the rice/pasta aisle… just because I felt like it would be there. Took me some time to find it! I was in the right place though. x]
Can’t forget that instead of “tossing” the shrimps, I took it as… stir-fry it. x]! But now we know, like after the fact! Like tossing a salad… Cooking terms, it just goes over my head, sometimes. Learning. Definitely, learning!

Ingredients

6 | Garlic cloves, minced | 1 tbsp + 2 tsp | Extra virgin olive oil | 1½ cups/12oz | Orzo |
3 cups/2pints | Grape tomatoes, halved | 3 ¼ cups | Low Sodium Chicken Broth | 1 lb | Large Shrimp, peeled and deveined |
¼ tsp | Salt | 2 tsp | Extra virgin olive oil | 1 cup | Fresh Basil, torn (optional) |

Instructions
Steps | Description | |||
Step 1 | Preheat oven to 400, with rack in top position. | |||
Step 2 | In large ovenproof skillet/dutch oven, with lid, heat 1 tspn + 2 tsp oil over medium heat. | |||
Step 3 | Add garlic. Cook until brown, 1 minute~. | |||
Step 4 | Increase to high heat. Add tomatoes. Cook and stir occasionally until softened, 6 minutes~. Season with salt and pepper. | |||
Step 5 | Add orzo and broth, and bring to simmer. Medium-low heat. | |||
Step 6 | Cover and bake until liquid is mostly absorbed, 10 to 12 minutes~. | |||
Step 7 | Toss shrimp with remaining tsp oil and ¼ tsp salt and ¼ pepper. Overnight in fridge to thaw or cold water for 5-10 mins. | |||
Step 8 | Remove skillet from oven, and place shrimp on top of orzo. | |||
Step 9 | Heat broiler. Broil until shrimp are opaque throughout, 4 minutes~. | |||
Step 10 | Sprinkle with basil and serve. | |||
